You and three RISE colleagues participated in the Fibenol Hackathon innovation competition "How to turn wood into food?", which took place in Estonia on 25-26 April. What did you do there?
"We pitched RISE proposals on how we can develop food from Fibenol's sugar streams, which is one of the streams that comes out of Fibenol's woody biomass. We can develop technologies to produce single cell oils or proteins, for example. In our initial proposal, we had four tracks and in the end, in consultation with Fibenol, we chose to focus on food oils. There were several other interesting contributions, so I believe that RISE's expertise and infrastructure can be helpful regardless of which track Fibenol chooses.
Can you tell us about your proposal and the background to it?
"Our proposal was on sophisticated lipids with special applications in infant nutrition, chocolates and personal care. When we learnt that Fibenol was looking for proposals on how to convert sugar streams from biomass to food, it felt natural for us to make a proposal. Our expertise and infrastructure provide opportunities for companies like Fibenol to develop their biotech processes - from platform chemicals, materials or liquid biofuels to a range of food components. The hard part for us was probably narrowing down to a focused proposal as we had a lot of ideas initially, but in the end it came down to single cell oils that can be used as a fat component in many foods.
