The aim of the project is to publish a new edition of the "Handbook on small-scale abattoirs". The handbook will serve as a tool for operators, advisers and other stakeholders in the process of planning a small-scale abattoir business.
The aim of the handbook is to update, revise and complement the "Handbook on small-scale abattoirs" which was published by the Institute for Jordbruks- och Miljöteknik (JTI) in 2007. Operators, stakeholders and other actors have requested a new edition to meet current and future needs. The handbook will make it easier for producers and operators in the stage of planning and developing a small abattoir business.
The work is initiated with interviews with operators who have made use of the previous edition of the handbook to provide the project group with essential input on relevant and requisite updates and revisions. Thereafter extensive work will take place with knowledge acquisition, visits to existing small-scale abattoirs and study trips nationally and internationally.
