Products taste, smell, appear, and feel a specific way when they come in contact with humans. The only way to know how products are perceived by people is through sensory analysis. Perception is a complex measure that can only be measured by people. Changing the formulation of a product with one ingredient rarely affects only one type of sensory perception, rather potentially many at once. Some things just simply cannot be measured by instruments alone. To know how things taste, smell, feel, and or appear from a human point of view is crucial for making critical decisions in product development and improvement.

RISE has various kinds of sensory analysis techniques at our disposal that are suitable for both research and industry applications. Questions specifically on the perception of senses can be answered using sensory analysis. It can also be combined with consumer tests and instrumental measures to gain a better holistic understanding of products. Therefore sensory analysis can either be a standalone measurement or a complement to other measures to contribute to a more in depth knowledge.
